Green Goddess Broccoli Salad

Fresh, herby and packed with nutrition. Serve as a side or a satisfying main dish.

Ingredients

Salad

  • 2 cups broccoli florets, chopped small
  • 1 cup grated carrot
  • 1 cup diced red cabbage
  • 1 tbs. dried cranberries, chopped
  • ¼ cup roasted cashews, chopped
  • ½ cup diced fresh mozzarella

Green Goddess Dressing

  • ¾ cup plain, full-fat Greek yogurt
  • 1 cup fresh parsley, loosely packed
  • 1 tbs. fresh mint leaves
  • 1 tbs. fresh basil leaves
  • 1 tbs. fresh dill
  • 3 tbs. fresh lemon juice
  • 1 tbs. extra-virgin olive oil
  • ¼ tsp. sea salt
  • Freshly ground black pepper, to taste

Directions

STEP 1
Mix the broccoli, carrot, cabbage, cranberries, cashews, and mozzarella in a large bowl.
STEP 2
Add the dressing ingredients to a blender or food processor and blend until smooth (small flecks of herbs will remain).
STEP 3
Toss the salad with the dressing and serve.

  1. I’m sure I’m not the only person who would make additions: I’d add avocado, hemp hearts, arugula, beets, and roasted edamame for more protein.
