Avocado Green Goddess Dressing With Basil

  • 1 large avocado
  • 2 tbs. white vinegar
  • 2 cloves garlic, chopped
  • 1 cup lightly packed fresh basil
  • ½ cup lightly packed fresh parsley
  • ½ tsp. sea salt
  • ½ cup extra-virgin olive oil
STEP 1
Halve the avocado, remove the pit, and scoop the flesh into a blender. Add the vinegar, garlic, basil, parsley, and salt. Secure the lid and blend until smooth.
STEP 2
Remove the lid plug, then continue blending on low speed while very slowly pouring the oil through the lid opening. Purée until smooth.
STEP 3
Transfer the dressing to a jar and use immediately or store in the refrigerator for up to two days.
STEP 4
Tip: Try making this dressing with lemon juice instead of vinegar, or with other fresh herbs, such as mint or cilantro.
