Makes | 1 1/2 cup
- Zest and juice of one lemon
- 1/2 cup tahini
- 1 clove garlic
- 1/2 tsp. ground cumin
- 3 tbs. white wine vinegar or sherry vinegar
- 1 tbs. extra-virgin olive oil
- Salt and cayenne pepper to taste
- 10 to 12 tbs. water
