Crispy Cauliflower Parmesan

Ingredients
- 4 tbs. extra-virgin olive oil, divided
- ½ tsp. dried oregano
- ¼ tsp. dried rosemary
- ½ tsp. dried basil
- ½ tsp. sea salt
- 1 head cauliflower, cut into florets
- 1 tbs. butter
- ½ small white onion, minced
- 1 garlic clove, minced
- ½ cup canned tomato sauce
- 2 tbs. minced fresh parsley
- ½ cup panko or other breadcrumbs (or gluten-free alternative)
- ¼ cup shredded Parmesan cheese, plus more to taste
