Green Goddess Broccoli Salad
Fresh, herby and packed with nutrition. Serve as a side or a satisfying main dish.

Ingredients
Salad
- 2 cups broccoli florets, chopped small
- 1 cup grated carrot
- 1 cup diced red cabbage
- 1 tbs. dried cranberries, chopped
- ¼ cup roasted cashews, chopped
- ½ cup diced fresh mozzarella
Green Goddess Dressing
- ¾ cup plain, full-fat Greek yogurt
- 1 cup fresh parsley, loosely packed
- 1 tbs. fresh mint leaves
- 1 tbs. fresh basil leaves
- 1 tbs. fresh dill
- 3 tbs. fresh lemon juice
- 1 tbs. extra-virgin olive oil
- ¼ tsp. sea salt
- Freshly ground black pepper, to taste
Directions
STEP 1
Mix the broccoli, carrot, cabbage, cranberries, cashews, and mozzarella in a large bowl.
STEP 2
Add the dressing ingredients to a blender or food processor and blend until smooth (small flecks of herbs will remain).
STEP 3
Toss the salad with the dressing and serve.

I’m sure I’m not the only person who would make additions: I’d add avocado, hemp hearts, arugula, beets, and roasted edamame for more protein.
