Sweet Potato and Turkey Hash
The addition of ground turkey turns this hash into a main course.
Ingredients
- 2 tsp. coconut oil
- 12 oz. ground turkey
- 2 medium onions, chopped
- 1 medium sweet potato, diced
- 2 large garlic cloves, minced
- 1 jalapeño pepper, seeded and minced
- 4 tsp. ground cumin
- 2 cups black beans
- 2 tbs. chopped cilantro
- 1 lime, cut into 4 wedges
- Salt and pepper to taste
Directions
STEP 1
In a skillet, melt one teaspoon coconut oil and cook the turkey until browned and cooked through, about seven to eight minutes.
STEP 2
In a separate skillet, sauté the onions in the remaining coconut oil until browned, about three to five minutes.
STEP 3
Add the sweet potato to the skillet and cook until it browns, about five to seven minutes.
STEP 4
Stir in the garlic, jalapeño, and cumin and sauté until fragrant, about 30 seconds.
STEP 5
Stir in the black beans and cooked turkey and cook until heated through.
STEP 6
Top with cilantro, season with salt and pepper, and serve with lime wedges.
