Pumpkin Spice Latte
Makes one drink | Prep time 5 minutes
Ingredients
- 1 cup oat milk or coconut milk
- 1 tbs. maple syrup
- 1/4 tsp. pumpkin pie spice, plus more for garnish
- 1/4 tsp. ground cinnamon
- 1/2 tsp. vanilla extract
- 1/4 cup hot espresso or strong brewed coffee
- Cinnamon stick for garnish (optional)
Directions
- Add milk, maple syrup, pumpkin pie spice, and ground cinnamon to a small saucepan and heat over medium-low heat until warm. Remove from heat and stir in vanilla extract.
- Froth with a hand frother or immersion blender for 10-15 seconds, or until desired foam forms. (Alternatively, use a milk steamer to heat and foam the mixture before stirring in the vanilla extract.)
- Pour espresso or coffee into a large mug. Top with the frothed milk mixture and an additional pinch of pumpkin pie spice. Garnish with a cinnamon stick if desired.
Iced Sugar Cookie Latte
Makes one drink | Prep time 5 minutes
Ingredients
- 1/4 cup hot espresso or strongly brewed coffee
- 1/2 tsp. coconut oil or butter
- 1 cup ice
- 1 cup oat milk
- 1 tbs. raw cane sugar, or sweetener of choice
- 1/4 tsp. almond extract
- 1/4 tsp. vanilla extract
- Pinch of sea salt
- 1 cup ice
Directions
- Pour a shot of espresso over the coconut oil or butter to melt. (Alternatively, melt coconut oil or butter in the microwave for 5 to 8 seconds and combine with 1/4 cup of strong coffee.)
- In a serving glass, add the oat milk, sugar, extracts, and salt, and stir well to combine.
- Add ice to the glass, and top with the butter-espresso mixture.
Chai-Spiced Hot Cider
Makes one drink | Prep time 10 minutes
Ingredients
- 1 cup apple cider
- 1 cinnamon stick
- 1/2 tsp. orange zest
- 1 chai tea bag
- Cinnamon stick for garnish (optional)
Directions
- Add cider, cinnamon stick, and orange zest to a small pot and bring to a boil over high heat. Remove from the heat and add the chai tea bag. Allow to steep for three to four minutes.
- Remove the cinnamon stick and tea bag and pour liquid into a large mug. Garnish with a cinnamon stick if desired.
Gingerbread Latte
Makes one drink | Prep time 5 minutes
Ingredients
- 1 cup coconut milk
- 1/2 tbs. maple syrup
- 1 tsp. unsulfured molasses
- 1/2 tsp. ground cinnamon
- 1/2 tsp. grated fresh ginger
- 1 tsp. vanilla extract
- 1/4 cup hot espresso or strongly brewed coffee
Directions
- Add coconut milk, maple syrup, molasses, cinnamon, and fresh ginger to a small saucepan over high heat. Bring the mixture to a boil and lower the heat to simmer until the spices are very aromatic, about two minutes. Remove from heat and stir in the vanilla extract.
- Froth with a hand frother or immersion blender for 10 to 15 seconds, or until desired foam forms. (Alternatively, use a milk steamer to heat and foam the mixture before stirring in the vanilla extract.)
- Pour espresso or coffee into a large mug and top with frothed milk mixture.
Dark Chocolate Peppermint Mocha
Makes one drink | Prep time 5 minutes
Ingredients
- 1 cup oat milk
- 1 tbs. raw cane sugar, or sweetener of choice
- 1/2 oz. dark chocolate, finely chopped
- 1/2 tsp. peppermint extract
- 1/4 cup hot espresso or strongly brewed coffee
Directions
- Add milk, sugar, and chocolate to a small pot over medium-low heat. Stir frequently until the chocolate melts and the mixture becomes smooth. Remove from the heat and stir in peppermint extract.
- Froth with a hand frother or immersion blender for 10 to 15 seconds, or until desired foam forms. (Alternatively, use a milk steamer to heat and foam the mixture before stirring in the peppermint extract.)
- Pour espresso or coffee into a large mug and top with the frothed milk mixture.
Vegan Eggnog Latte
Makes one drink | Prep time 5 minutes
Ingredients
- 1 cup store-bought vegan eggnog
- 1/2 cup oat milk
- 1/4 cup hot espresso or strongly brewed coffee
- Freshly grated nutmeg, for garnish (optional)
Directions
- Add eggnog and oat milk to a small saucepan and bring to a boil.
- Froth with a hand frother or immersion blender for 10 to 15 seconds, or until desired foam forms. (Alternatively, use a milk steamer to heat and foam the mixture.)
- Pour espresso or coffee into a large mug and top with the frothed eggnog mixture. Garnish with freshly grated nutmeg if desired.
