Ingredients
Meatballs
- 1 lb. turkey
- 1/2 cup almond meal
- 1/2 cup onion, diced
- 1 tbs. ground flaxseed
- 1 tsp. sea salt
- 1/4 tsp. garlic powder
- 1/4 tsp. chili powder
Ketchup
- 1 can (6 oz.) tomato paste
- 2 tbs. apple cider vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. garlic powder
- 1/4 tsp. dry mustard
- 1/4 cup water
- 1/4 tsp. cinnamon
- 1/4 tsp. sea salt
Directions
STEP 1
Preheat the oven to 350 degrees F. In a medium mixing bowl, combine all of the ingredients for the meatballs and mix well. Form the meatball mixture into eight balls. Place in a muffin tin, pressing down slightly with your hand.
STEP 2
In a separate bowl, combine the ketchup ingredients. Spoon a small dollop of ketchup onto each turkey muffin — you should have some ketchup leftover. Bake uncovered until cooked through, about 20 minutes.
STEP 3
Serve the meatballs topped with the remaining ketchup.
