Maple-Apple Meatballs

Full of seasonal flavors, these meatballs are great for meal prep and batch cooking.

  • 3/4 cup yellow onion, finely diced
  • 3 green apples, finely diced
  • 1/2 cup parsley, chopped
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1/2 cup almond flour
  • 2 tsp. salt
  • 1 oz. sage, chopped
  • 3 lbs. lean ground turkey
STEP 1
Preheat the oven to 350 degrees F. In a large bowl, combine all ingredients except for the turkey and stir to combine.
STEP 2
Add the turkey and mix to combine. Form the mixture into evenly-sized meatballs, about 1/4 cup each.
STEP 3
Place the meatballs in a greased muffin tin and bake for 30 to 35 minutes, or until they reach an internal temperature of 165 degrees F. If desired, increase the oven heat to broil for the final three to four minutes of baking to form a caramelized finish on the meatballs.
