- 1 large sweet potato
- 3 oz. goat cheese
- 3 figs
STEP 1
Preheat the oven to 375 degrees F. Cut the sweet potato into thin disks.
STEP 2
Lightly spray the potato disks with coconut or olive oil and bake for about 15 minutes.
STEP 3
Top the cooked sweet potatoes with the goat cheese and sliced figs.
