SOMETHING SIMPLE: Avocado Caesar Dressing
Use avocado instead of eggs for a creamy — and vibrant — Caesar dressing.
Ingredients
- 1 ripe avocado
- 3 garlic cloves, peeled
- 4 anchovy fillets (or 2 tsp. anchovy paste)
- 1 ½ tbs. lemon juice (about half a lemon)
- 1 tbs. white- wine vinegar
- 1 tsp. sea salt
- ¼ tsp. freshly ground black pepper
- ½ cup extra- virgin olive oil
Directions
STEP 1
Halve the avocado and remove the pit. Scoop out the avocado flesh and add it to a blender or small food processor.
STEP 2
Add the garlic cloves, anchovy fillets, lemon juice, white-wine vinegar, salt, and pepper. Blend on high speed until smooth.
STEP 3
With the motor running, pour the olive oil into the mixture in a steady stream.
STEP 4
Use immediately, or store in a jar and refrigerate for up to three days.
STEP 5
