Breakfast Brownie

Dessert for breakfast? Made with chocolate protein, healthy fats, and other good-for-you ingredients, you can feel good about starting your day with these brownies.

Ingredients

  • 5 scoops chocolate Life Time vegan protein powder
  • 2 cups gluten-free oats
  • 4 tbs. ground flaxseed
  • 1/2 cup pecans
  • 1 cup unsweetened almond milk
  • 1 tbs. liquid stevia
  • 8 tbs. almond butter
  • 1/4 cup coconut oil

Directions

STEP 1
Preheat the oven to 350 degrees F. In a bowl, combine all of the dry ingredients: protein powder, oats, flaxseed, and pecans. In a separate bowl, combine all of the wet ingredients: almond milk, stevia, almond butter, and coconut oil. Mix both well.
STEP 2
Pour the wet ingredients into the dry ingredients and mix until combined.
STEP 3
Spray an 8x8 pan with avocado or coconut oil cooking spray. Spread the mixture evenly in the pan and press down with your palm until it's flattened.
STEP 4
Bake for 25 to 30 minutes, or until the edges are browned.
STEP 5
For the best flavor, refrigerate overnight before eating. Keep refrigerated until you're ready to enjoy.
