Savory Breakfast Bowl

Ingredients

  • 1/2 tbs. olive oil
  • 12 baby bell peppers, sliced
  • 1 lb. ground turkey
  • 2 cups cherry tomatoes
  • 2 cups sweet potato, diced
  • 4 cups mixed greens
  • 1 avocado
  • Sea salt and pepper to taste

Directions

STEP 1
Heat the olive oil in a medium-to-large skillet over low heat. Add the bell peppers, tomatoes, and sweet potatoes. Sauté until cooked through and browned. Remove from the pan and set aside.
STEP 2
Add the ground turkey to the same skillet and cook until browned, about seven to eight minutes.
STEP 3
In four separate bowls, add the ground turkey and vegetables. Top each bowl with 1/4 avocado and a handful of mixed greens.
