Switching to a gluten-free diet can be hard.

No, it is hard. Unless, of course, you are a natural at cooking with all whole foods all the time.

Maybe you’ve taken a tip from the magazine about spending a few hours on a Sunday to prep your ingredients for the week or for several days. Or maybe you cook plenty of extras during dinner the night before, so you have breakfast and lunch in containers, saved in your fridge for the next day.

In theory, I do this every night. In reality, I prep foods once or twice a week. Every time I come back from the farmers’ market and rinse my herbs and veggies and portion them out for the week’s meals, I think, gosh, this isn’t that difficult. It’s just a matter of making it a habit.

I will say, when I do eat gluten-free, I feel so much better. More energy, more bounce in my step. I know that gluten-heavy foods don’t sit right with me (extreme fatigue, stomach cramping, loads of burping [sorry, dining partners]), so I generally avoid them. But once in a great while, there’s just the fluffiest, flakiest turnover that entices me….

So yes, I’ll still say that switching to a gluten-free diet is hard.

What’s helped me going gluten-free?

Finding gluten-free alternatives in pastas, granola, and bars. I’m digging these KIND Bars from their new Nuts & Spices line. They all have 5 grams of sugar or less, and they taste delicious. I received a package at work today and after sharing them with my hungry coworkers, am sad to say (but not surprised) that there are only a few bars left. Apparently I’m not the only fan of KIND Bars.

When a chocolate craving hit mid-afternoon, I tried the Dark Chocolate Chili Almond — a perfect mix of hearty nuts, salt, rich chocolate, and spice. Yum!
