  • Cook Time55 minutes

Crust

  • 2 cups fine ground almond flour
  • ½ tsp. sea salt
  • 1 tbs. raw cane sugar or coconut sugar
  • 2 tbs. coconut oil, melted
  • 1 large egg

Filling

  • ½ cup maple syrup
  • 1 cup Medjool dates, pitted
  • 3 large eggs
  • ¼ cup coconut oil, melted
  • 1 tsp. vanilla extract
  • ½ tsp. sea salt
  • 2½ cups raw pecans, divided
Prepare the crust
STEP 1
Preheat the oven to 350 degrees F.
STEP 2
Combine the almond flour, ½ teaspoon salt, cane sugar, 2 tablespoons coconut oil, and 1 egg in a food processor and blend until a dough forms.
STEP 3
Press the dough into the bottom and sides of a seasoned and greased 10-inch cast-iron skillet to make an even layer. Use a fork to poke holes across the surface of the crust, then bake until golden, about 15 minutes. Remove the skillet from the oven and increase the temperature to 375 degrees F.
Prepare the filling
STEP 1
In a food processor, blend the maple syrup and dates to form a smooth paste. Add the remaining eggs, coconut oil, vanilla extract, and salt, and blend until smooth. Roughly chop 2 cups of the pecans; leave the remaining ½ cup whole. Fold the chopped pecans into the date filling.
STEP 2
Pour the filling over the crust. Arrange the remaining ½ cup of whole pecans on top of the filling, then bake for 25 to 30 minutes, or until the filling is puffy and set.
STEP 3
Cool for 20 minutes before slicing and serving.
