Fresh ginger, cinnamon, and molasses make this seasonal coffee drink the perfect way to warm up on a cool day.

  • 1 cup coconut milk
  • 1/2 tbs. maple syrup
  • 1 tsp. unsulfured molasses
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. grated fresh ginger
  • 1 tsp. vanilla extract
  • 1/4 cup hot espresso or strongly brewed coffee
STEP 1
Add coconut milk, maple syrup, molasses, cinnamon, and fresh ginger to a small saucepan over high heat. Bring the mixture to a boil, then lower the heat to simmer until the spices are very aromatic, about two minutes. Remove from heat and stir in the vanilla extract.
STEP 2
Froth with a hand frother or immersion blender for 10-15 seconds, or until desired foam forms. (Alternatively, use a milk steamer to heat and foam the mixture before stirring in the vanilla extract.)
STEP 3
Pour espresso or coffee into a large mug and top with frothed milk mixture.
