Clemen-thyme Pomegranate Smash

This seasonal mocktail features a pomegranate shrub (also known as a drinking vinegar) that adds a bright, tangy depth of flavor. The shrub requires a four-day fermentation period, so be sure to plan ahead.

Ingredients

  • 4 sprigs thyme, plus more for garnish
  • 1 clementine, quartered
  • ½ tsp. maple syrup
  • 1 oz. pomegranate shrub (prepared four days in advance )
  • Soda water to taste

Directions

STEP 1
Make the pomegranate shrub at least four days in advance, as it requires time to ferment.
STEP 2
To prepare the mocktail: Place the thyme and clementine in a cocktail shaker. Add the maple syrup and gently muddle (a gentle touch is the secret here: Overly aggressive muddling will bring out the clementine’s bitterness, but you’ll want to muddle at least enough to release its juice).
STEP 3
Add the pomegranate shrub.
STEP 4
Fill the cocktail shaker with ice, secure the lid, and shake well for 10 to 15 seconds.
STEP 5
Strain into a glass filled with fresh ice and top with soda water. Garnish with a sprig of thyme.
STEP 6
Optional spirit: Bourbon
