Quinoa Taco Bowls

Add your favorite taco toppings, such as guacamole, cheese, or mixed greens, to customize these bowls to your taste.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb. lean ground turkey
  • 1 tbs. chili powder
  • 1/2 tsp. salt
  • 1 tbs. cumin
  • 1 tsp. garlic powder
  • 1 tbs. olive oil
  • 8 oz. black beans
  • 1 red pepper, sliced
  • 1 orange pepper, sliced
  • 1/2 cup red onion, sliced

For the pico de gallo:

  • 2 large tomatoes, diced
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 tsp. garlic, minced
  • 1/2 lime, juiced

Directions

STEP 1
Bring the quinoa and water to a boil in medium pot. Reduce heat to low, cover, and cook for 15 minutes.
STEP 2
Cook the ground turkey with seasonings over medium heat until browned and cooked through.
STEP 3
Add the olive oil to a small saucepan and sauté the beans, peppers, and onion until tender.
STEP 4
Combine the tomatoes, onion, cilantro, and garlic for the pico de gallo and stir until combined. Add juice of half a lime.
STEP 5
Assemble the taco bowls by adding the quinoa, ground turkey, black beans, fajita veggies, and pico de gallo. If desired, add other favorite taco toppings, such as guacamole, cheese, or mixed greens.
