Next time you're in need of a game-time or after-school snack, try this nutritious and delicious take on nachos.

  • 3 medium sweet potatoes
  • 1 lb. lean ground turkey
  • 1 tbs. chili powder
  • 1 tbs. cumin
  • 1 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1 can black beans, drained
  • 1/4 cup fresh pico de gallo
  • 1/2 cup shredded cheese
  • 3 green onions, sliced
STEP 1
Preheat the oven to 350 degrees F. Slice the sweet potatoes as thinly as possible and lightly coat them in olive oil.
STEP 2
Line the sweet potatoes in single layer on baking sheet. Bake for 30 minutes, or until crisp.
STEP 3
While the sweet potatoes are baking, brown the ground turkey in a skillet with the chili powder, cumin, garlic powder, and cayenne pepper.
STEP 4
Once the "chips" are crisp, arrange on a large plate and top with the ground turkey, beans, pico, cheese, and green onions.
