Burrito Bowl
Get inspired by your favorite Mexican takeout to make this healthier version of a build-your-own bowl.
Ingredients
- 1 lb. grass-fed ground beef or ground turkey
- 2 tbs. tomato paste
- 1 can (14.5 oz.) diced tomatoes
- 1 1/2 tbs. chili powder
- 1 tsp. garlic powder
- 1 tsp. cumin
- 1/4 tsp. sea salt
- 2 cups cooked brown rice
- 2 cups chopped romaine lettuce
- 1 cup black beans
- 2 cups chopped tomatoes
- 1 avocado
Directions
STEP 1
Heat a skillet over medium heat. Add the ground beef or turkey and cook, stirring occasionally, until it's slightly browned — about five minutes.
STEP 2
Add the tomato paste, diced tomatoes, chili powder, garlic powder, cumin, and sea salt to the skillet. Let simmer on low for five to seven minutes or until the meat is cooked through. Allow any extra liquids to cook off if desired.
STEP 3
To assemble each bowl, layer in 1/2 cup brown rice, 1/2 cup chopped lettuce, 1/4 beef or turkey mixture, 1/4 cup black beans, 1/2 cup chopped tomatoes, and 1/4 sliced avocado.
