  • Makes 6 servings
  • Prep Time 10 minutes
  • Cook Time 2 hours, 15 minutes freezing time

Ingredients

  • 1 cup plain, full-fat Greek yogurt
  • ¼ cup organic creamy peanut butter
  • ¼ cup maple syrup
  • 6 wooden craft sticks
  • ¼ cup roasted and salted peanuts, chopped
  • 8 oz. dark chocolate, roughly chopped
  • 2 tbs. coconut oil

Directions

STEP 1
Line a baking sheet with parchment paper.
STEP 2
In a mixing bowl, whisk the yogurt, peanut butter, and maple syrup until smooth.
STEP 3
Use a ¼-cup measuring cup to scoop the mixture onto the baking sheet in six mounds. (Be sure they’re narrow enough to fit into the wide-mouthed jar used in the next step.) Press a wooden craft stick into each mound and sprinkle evenly with the chopped peanuts. Freeze until solid, about two hours.
STEP 4
Place the chocolate and the coconut oil in a wide-mouth canning jar or other microwave-safe container. Microwave until melted, 20 to 30 seconds at a time, stirring between each round.
STEP 5
Working one at a time, dunk the frozen yogurt pops into the melted chocolate until evenly coated, allowing the excess chocolate to drain off before placing the pops back on the baking sheet. Return the baking sheet to the freezer for 15 minutes, or until the chocolate is firm.
STEP 6
Alternatively, leave the frozen pops on the baking sheet and drizzle them with the melted chocolate to coat the top, then freeze again until firm.
