Makes | 1 cup
- 3/4 cup chopped cucumber
- 2 tbs. lemon juice
- 1/2 cup Greek yogurt
- 2 tbs. chopped fresh mint
- Freshly ground black pepper and salt to taste
Optional: Add a clove of minced garlic, a dash of Cayenne, or 1 teaspoon minced scallions.
- Blend cucumber, lemon juice and yogurt together in a blender until smooth. Add chopped mint, salt and pepper and pulse to mix.
- Adjust seasonings to taste, adding minced garlic, scallions or cayenne to add more zip to your dip.
