Using avocados (healthy fats!) as your base, this four-ingredient breakfast is easy to make and a fun twist on a traditional egg breakfast.

  • 4 avocados
  • 8 eggs
  • 4 oz. ham, diced
  • 4 strips of cooked nitrate-free bacon, crumbled
STEP 1
Preheat the oven to 435 degrees F.
STEP 2
Cut avocados in half lengthwise, remove pits, and scoop out half of the flesh to make room for an egg.
STEP 3
Place the avocado halves in a small baking dish and crack an egg into each, adding the yolk first, and then the egg white, until it's filled.
STEP 4
Top with diced ham, divided evenly between all avocado boats.
STEP 5
Bake for 15 to 20 minutes, or until egg whites have set.
STEP 6
Garnish with bacon pieces.
