Wild Rice Orange Salad

Ingredients
- 1 1/2 cups wild rice
- 3 large navel oranges
- 2 tbs. lemon juice
- 1/4 cup olive oil
- 1/2 tsp. salt
- 1 tsp. black pepper
- 1/2 cup green onion, chopped
Directions
STEP 1
Cook the wild rice according to the package directions.
STEP 2
Peel and slice the oranges into bite-sized pieces.
STEP 3
Combine the lemon juice, olive oil, salt, and pepper; whisk together.
STEP 4
In a large bowl, stir in the rice, oranges, and dressing until well mixed.
STEP 5
Garnish with green onion. Try this recipe with some fresh grapefruit for an additional bright flavor.
