Using cooked chicken speeds up the preparation of this light, refreshing, and nutritious salad.
- 1 lb. chicken breast, cooked
- 2 avocados
- 2 apples
- 1/2 cup celery
- 1/2 cup red onion
- 4 tbs. extra-virgin olive oil
- 4 tsp. fresh lime juice
- Sea salt and pepper to taste
STEP 1
Chop the chicken, cube the avocado, peel and core the apple, and dice the celery and red onion.
STEP 2
In a bowl, combine the chicken, fruit, and vegetables with the olive oil and lime juice, seasoning to taste with salt and pepper. Toss to combine and serve immediately.
