Customize this slow-cooker soup to your liking by adding your favorite seasonal veggies, such as broccoli, cauliflower, or squash.
- 2 1/2 lbs. boneless, skinless chicken thighs, cubed
- 2 large leeks, chopped
- 3 stalks celery, chopped
- 6 large carrots, chopped
- 2 tbs. garlic, minced
- 2 tsp. turmeric
- 1 tsp. freshly grated ginger
- 2 tbs. parsley, chopped
- 1 quart bone broth
- 2 quarts low-sodium chicken broth
- 1 tsp. pepper
- 2 tsp. salt
STEP 1
Combine all ingredients in a large slow cooker and cook on high for six hours, or until the carrots are tender and the chicken is cooked through.
