  • 2 1/2 lbs. boneless, skinless chicken thighs, cubed
  • 2 large leeks, chopped
  • 3 stalks celery, chopped
  • 6 large carrots, chopped
  • 2 tbs. garlic, minced
  • 2 tsp. turmeric
  • 1 tsp. freshly grated ginger
  • 2 tbs. parsley, chopped
  • 1 quart bone broth
  • 2 quarts low-sodium chicken broth
  • 1 tsp. pepper
  • 2 tsp. salt
STEP 1
Combine all ingredients in a large slow cooker and cook on high for six hours, or until the carrots are tender and the chicken is cooked through.
