This whole-food snack features a nice chocolatey crunch from the cacao nibs.

Sunflower seed energy bites

  • 1 cup gluten-free oats
  • 3/4 cup flaxseed
  • 1/2 cup sunflower seed butter
  • 3 tbs. unsweetened coconut milk
  • 1 tsp. liquid stevia
  • 1/4 tsp. vanilla extract
  • 1/4 cup unsweetened cacao nibs
STEP 1
Combine all of the ingredients except for the cacao nibs in the base of a food processor. Process until well combined. Add the cacao nibs and gently toss.
STEP 2
Roll into 15 small balls. Place in the refrigerator for at least 20 minutes to set before eating.
