Use fresh peaches, ginger, and turmeric to make this sweet-and- spicy chutney.

Ingredients

  • 3 ripe peaches
  • 2 tbs. rice vinegar
  • 2 tbs. minced fresh ginger
  • 1 tbs. sucanat or brown sugar
  • 2 tsp. minced fresh turmeric
  • 1/2 tsp. sea salt
  • 1/4 tsp. cayenne pepper

 

Directions

  1. Score the bottoms of three ripe peaches with an X, then blanch peaches in a pot of boiling water for two to three minutes.
  2. Transfer the fruit to an ice bath to stop the cooking, then peel with a paring knife.
  3. Dice and pit the peaches and place in a small saucepan with the rice vinegar, ginger, sucanat or brown sugar, turmeric, sea salt, and cayenne pepper.
  4. Bring to a boil over medium heat, then lower heat to maintain a lively simmer. Cook, stirring until the peaches have softened and the mixture is thick, about five to 10 minutes.
