Roasted-Dandelion-Root Tea

Dandelion-root tea delivers a warm, toasty aroma with a slightly bitter character reminiscent of coffee.

Makes one serving

Ingredients

  • 8 oz. water
  • 1 tsp. roasted-dandelion-root tea (or 1 tea bag)
  • 1 tbs. macadamia-nut milk or milk of choice (optional)
  • l tsp. honey or preferred sweetener (optional)

Directions

  1. Heat water to a full boil. Load loose tea into a tea ball or tea filter and place in a mug, or place tea bag in a mug.
  2. Pour water into the mug and steep tea for 10 to 15 minutes.
  3. Remove tea and add milk and sweetener, if using. Serve.

Pu-erh Tea

Pu-erh teas are unique because they include fermentation as part of their processing. The result is a very smooth cup of tea with deep notes of root vegetables, dark chocolate, molasses, and even leather. Pu-erh teas are available both as loose tea and in the more traditional, compressed style — you can find a variety of shapes, including bowls, cakes, and bricks. Unlike most tea, pu-erh is ideal for multiple steepings. Use it for several infusions to see how the flavors develop.

Makes one serving

Ingredients

  • 8 oz. plus 2 oz. (1/4 cup) water
  • 1 tsp. pu-erh tea (either loose or broken off of a compressed bowl, cake, or brick)
  • 1 tbs. macadamia-nut milk or milk of choice (optional)
  • 1 tsp. honey or preferred sweetener (optional)

Directions

  1. Heat 8 ounces water to a boil. Load tea into a tea ball or tea filter.
  2. Place tea in mug and rinse briefly with about ¼ cup cold water, then drain.
  3. Pour boiling water into mug and steep for two to four minutes.
  4. Remove tea and add milk and sweetener, if using.

Yerba Mate

Yerba mate is derived from Ilex paraguariensis, a caffeine-bearing plant native to South America.

Makes one serving

Ingredients

  • 8 oz. water
  • 1 tsp. mate leaves or 1 tea bag
  • 1 tsp. honey or preferred sweetener (optional)

Directions

  1. Heat water to a boil. Load mate leaves into a tea ball or filter and add to mug, or add tea bag to mug.
  2. Pour water into the mug and steep the tea for five to eight minutes.
  3. Remove tea and add sweetener, if using, then serve.
