Last month, Robert Siegel of NPR’s All Things Considered interviewed nutritionist Marion Nestle, PhD, MPH, about her thoughts on Walmart’s five-year plan to sell healthier and more affordable foods. While Nestle, professor of nutrition, food studies and public health at New York University, acknowledges that the new standards for processed foods will have a big impact on the food industry, she says the more important effort is to make fruits and vegetables more affordable for consumers:

“The root cause of the problems in our food system is really farm subsidies and the way that they work. We support the production of corn, soybeans, cotton and wheat. We don’t support the production of fruits and vegetables. If we want people to eat more fruits and vegetables, we need to change that in some way.”
